Ham & Egg Cups​​​​​​​​

Ingredients (Makes 6)​​​​​​​​

6 small round slices of nitrate free ham​​​​​​​​
8 pastured organic eggs​​​​​​​​
3 LYG beef liver capsules, emptied​​​​​​​​ - https://www.loveyagutsbox.com/products/organic-beef-liver
3 large cherry tomatoes, halved​​​​​​​​
3 button mushrooms, finely chopped​​​​​​​​
Sea salt & pepper, to taste​​​​​​​​
½ cup cheddar cheese​​​​​​​​

Method ​​​​​​​​
​​​​​​​​
1. Preheat oven to 180C.​​​​​​​​
2. Spray muffin tins with cooking spray or grease with oil/butter. Better yet, use silicone muffin trays.​​​​​​​​
3. In a large bowl, whisk together the eggs, beef liver capsule powder and salt/pepper.​​​​​​​​
4. Line each muffin hole with ham.​​​​​​​​
5. In the bottom of each muffin hole, add a little cheddar and some chopped mushrooms. Spread the cheese and mushrooms evenly amongst the 6 muffin holes.​​​​​​​​
6. Pour the egg mixture over the cheese and mushrooms and top each hole with a cherry tomato half.​​​​​​​​
7. Place in the oven and cook for 20-25 minutes until fully cooked.
