Bone Marrow & Sauerkraut Salsa
Recipe | Grass-fed steak with bone marrow salsa verde
Ingredients:
Steak of choice
Salt and pepper
1 Tbsp tallow, lard or butter
2 marrow bones
1 garlic clove
Large handful of fresh herbs such as parsley, basil, dill, mint or chives
1 Tbsp sauerkraut
1 Tbsp sauerkraut brine
Method:
1. Preheat the oven to 220C. Roast the marrow bones for 15 minutes.
2. Meanwhile, season your steaks and cook in tallow to your preferred doneness. Allow to rest while you prepare the bone marrow salsa verde.
3. Remove the marrow bones from the oven. When cool enough to handle, scoop the soft marrow out of the bones and put into a small bowl.
4. Finely chop the garlic, herbs and sauerkraut. Add to the bone marrow and mix together along with the sauerkraut juice. Season to taste and serve immediately with the steak.
