One Pot Brothy Sausage Stew

Ingredients
2tbsp fat ~ butter, lard, tallow or ghee
3 brown onions, finely diced
2 sticks of celery, finely diced
3 cloves garlic, finely minced
2 teaspoons fresh rosemary or thyme, chopped
200g buckwheat/ rice/ pearl barley (soaked overnight first)
3 litres pork or chicken bone broth
3 large potatoes washed diced
1 sugarloaf cabbage, minced as fine as you can get it.
500g good quality sausage meat rolled into teaspoon sized balls
Salt and pepper
Sauerkraut to garnish
Double cream or crème fraiche
Method
1. Place large saucepan over low heat.
2. Add fat to the pan, along with the onion, celery, garlic, herbs, a pinch of salt and pepper. Sweat on a low heat, not allowing it to colour.
3. Once the vegetables have softened, add in the buckwheat/pearl barley/rice and toast a little in the pan. Add in the broth, bring to low simmer and cook for 10 minutes.
4. Add in the diced potatoes and allow to cook for another 10 minutes on low heat.
5. Finally add in the cabbage and sausage. Try not to stir the pot as to not break up sausage and potatoes. Pop lid on and simmer for 5mins. You could add in any other greens you have on hand at this stage e.g. peas, chopped green beans or asparagus’s can be a nice addition.
6. Top every bowl with a spoonful of sauerkraut, and a dollop of double cream or crème fraiche if you fancy it.
Notes:
* Great recipe for batch cooking as it serves 8 people. Freezes well for up to 6 months.
* Simple, delicious and satiating family meal.
* You can substitute the pearl barley for any other soaked grain or legume, or omit altogether and substitute with extra sausage or veg.
* Choose a good quality sausage meat (we use a offal mixed lamb+lamb liver).
* Any broth can be used, as can bone broth powder.
